Prerequisites–Level 1 and Level 2
$20 a class or $240 per session (half due at first class.)
Thursday starting May 6th to July 22nd 2010
11:00 am – 12:30 pm
In this class we will start breaking down the parts of a meal and spending more time discussing them as well as trying new recipes.
Day 1:
Appetizers–We will make Sausage Stars and Chinese Pot stickers
Day 2:
Appetizers–Layered Mexican Triangles, Stuffed Tomatoes and Pepperoni bites
Day 3:
Cheese tasting–each student will be asked to bring a cheese to share. We will talk about the different flavors and what they might go well with.
Day 4:
Soups–Taco Soup and Cajun Black Beans and Sausage
Day 5:
Soups–Cream of Potato and other creamed soups (Chicken Corn Chowder)
Day 6:
Gnocchi–a homemade potato pasta.
Day 7:
Sauces and Gravies. We will discuss and make a white sauce, cheese sauce, chicken gravy, beef gravy and biscuit gravy.
Day 8:
Yeast Rolls–Clover, Parker House, etc…
Day 9:
Cake Decorating–review of butter cream icing, stars, shell border and writing.
Day 10:
Cake Decorating–Royal Icing, practice roses and leaves, learn the Victorian rose and daisies.
Day 11:
Cake Decorating–Tips for baking, leveling and icing a cake smooth. Each student will bring their own cake to decorate using everything they have learned so far.
Day 12:
Cake Decorating–Topsy Turvy cakes and using fondant.
